The founders of Gimme Samosa had a vision to reinvent the classic Punjabi-style snack. They had two main objectives; to be baked and not fried, and to offer exciting new flavours, with a slight plot twist – to be both sweet and savoury. They felt that with the right combination of innovative flavours, great tasting ‘mosas’ and some exciting branding and design they could launch the brand as a Quick Service Restaurant concept, before scaling up to bigger ambitions in the future.
Entering the research and development stage, we identified three main challenges that would frame the development process; the first being the development of a samosa dough that could be baked, but still retain that flavour and richness of a classic Punjabi-styled, fried samosa. The second was the consideration around creating innovative sweet, dessert samosas with accompanying dips and nailing the all-important ooze of the ‘Nutmare’ Samosa which was to be filled with Nutella. And lastly, we sought to automate the process as much as possible so that the samosas could be baked to order and still meet customer expectations for a quick service restaurant operation and delivery times.

With all of the above in mind, we got to work, and needless to say, this project was particularly popular with the development team! After testing many approaches and iterations for the dough recipes we finally had a eureka moment where everything came together, and so focus could be shifted to finalising the delicious fillings and dipping sauces. The final menu comprised of the following;
- You Butter Believe It: Butter chicken filling with a yoghurt raita
Spud Me Up: Spiced potato and pea filling with a tamarind chutney
Killa Keema: Spiced lamb filling with a green chutney
Apple of my Pie: Spiced, caramelised apple filling with a vanilla custard dip
Nutmare: Nutella and hazelnut filling with a raspberry cream dip
Pecan Blinder: Pecans dates and white chocolate filling
From this point we knew that with the delicious range of mosa's and dips, coupled with their incredible branding and captivating names, they were on to a real winner. The final piece of the puzzle was to assist them in setting up their production kitchen and training them on how to produce the final products, ready for launch across Deliveroo and Uber Eats.
Everyone was blown away with the results and the samosas soon became a hit across SW London and beyond. They quickly gained traction on social media channels with their fun Gimme Gang characters and went from strength to strength, with delivery requests coming in from across the capital for bespoke business lunches and events too. The team now have their sights set on how to take the brand to the next level!
